Crunchy Cucumber Salad

Ingredients
  

Salad

  • 2 English cucumbers thinly sliced

Dressing

  • cup extra-virgin olive oil
  • 4 tbsp hemp hearts
  • 4 tbsp each basil + mint finely chopped
  • Juice from 1 lemon + zest
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • 2 tbsp filtered water
  • Optional: 1 tsp maple syrup
  • Sea salt + pepper to taste

Instructions
 

  • Whisk the dressing, toss with cucumbers, and enjoy right away or chill to let the flavours shine.

Here’s a little tip: if you’re taking it to a picnic or BBQ, double the recipe. It disappears fast!
